Pasta And Calamari 'bianco'

1 kg of squids - I had three pieces about kilo, caught last week
garlic
parsley
1.5 dl olive oil
salt
pepper
2 dl good white wine

Finely chop parsley and garlic in large pieces. At 0.5 dl oil minute - two fry 2 / 3 garlic and 2 / 3 of parsley, the rest is added later.
Add large pieces of squids and pour the rest of the oil. Fry it about 10 - 15 minutes. In the meantime, i added the meat from shells, i have it in the fridge.
After that, add a little (1 dl) of water, wine, salt, pepper and remaining garlic and parsley. Cook another 5 - 10 minutes. Serve with paste and white wine.

Thanks fdove3, the recipe is excellent, squid are caught in large these days so I'll try it out immediately this weekend!

Guarda fai un bello spaghetto con i calamari o in bianco o con il sugo in bianco è semplicissimo prendi una padella ci metti dell'olio e fai imbiondire la cipolla poi aggiungi i calamari li fai stare un pochino nell'olio li giri e li rigiri poi aggiungi del vino bianco lasci mantecare un po il tutto senza far svaporare del tutto il vino scoli la pasta la metti in padella e li mantechi un po insieme se sono troppo secchi mi aggiungi un po d'acqua della pasta quindi una volta scolata non buttare via l'acqua immediatamnte aspetta di finire il tutto invce se vuoi farli con il sugo prendi sempre una padella un goccio d'olio o una noce di burro a me con il sugo piace di più e la cipolla la fai imbiondire un po aggiungi i calamari e se nel congelatore hai un misto di mare lo aggiungi una vlta che si sono un po ammorbiditi aggiungi il sugo ma mi raccomando non moltissimo sennò perde di gusto il pesce lo fai bollire per una decina di minuti e aggiungi la panna fresca mi raccomando senza zucchero lasci bollire per un altra decina di minuti e aggiungi la pasta ti ripeto il sugo alla fine deve solo colorare quindi mi raccomando non molto regolati in base alla quantità che devi cucinare....
