making squid NOT chewy

i heard that if you put kiwi fruit over the squid in the fridge it stops them from being chewwy is that true

I hear the same from many people. I haven't tried it as my calamari is always tender without any marinade.

Kiwi fruit, passionfruit and pineapple have a specific enzyme that help in tenderizing protein. You can do a search on google for details.

I have used kiwi fruit to marinade my squid. It definitely works. I can cook my fresh squid normally so it is tender but using kiwi fruit makes it even more so. I marinade my squid rings in mashed kiwi fruit for up to about 4hrs if time permits. I have done it for about 2 hrs and it still seems to work.

After I have marinaded them I do not rinse them in water as leaving the kiwi fruit frlavour adds a nice flavour to the calamari. I simply press the squid rings between some kitchen paper to remove most of the moisture then dip them in flour eggs and crumbs before cooking them in 190degC temperature controlled deep fryer until golden brown. Beautiful!!!!!

Hi!

When I make stuffed squid, I cook it slowly in a pan on the stove on medium heat, instead of in the oven. (If you overcook, the squid becomes chewy, and it's almost like chewing rubber). I mix soya sauce with an equal amount of water so it isn't too salty, and I put enough of this in the pan to cover the bottom third of the stuffed squid. This also works for squid rings fried in onions if you don't want to stuff them. I rarely am able to access fresh squid, but I find this method works even if the squid has been frozen and defrosted.

In my trade as a chef i can tell you that marinating squids in mild tenderises it dramatically!!!.Also if using frozen squid tubes make sure you skin the frozen tubes it will also make the finished product a 100 times tenderer.Anyway hope this helps tight lines rolleyes.gif tongue.gif zorro.gif

I marinade/soak squid in milk for at least 4 hours and it is tenders as every time!
