i heard that if you put kiwi fruit over the squid in the fridge it stops them from being chewwy is that true

I have used kiwi fruit to marinade my squid. It definitely works. I can cook my fresh squid normally so it is tender but using kiwi fruit makes it even more so. I marinade my squid rings in mashed kiwi fruit for up to about 4hrs if time permits. I have done it for about 2 hrs and it still seems to work.
After I have marinaded them I do not rinse them in water as leaving the kiwi fruit frlavour adds a nice flavour to the calamari. I simply press the squid rings between some kitchen paper to remove most of the moisture then dip them in flour eggs and crumbs before cooking them in 190degC temperature controlled deep fryer until golden brown. Beautiful!!!!! Thanks Ian |
